Bristol Chef Praises Maple’s Versatility

We conclude our series celebrating the tradition of maple sugaring with Chef Doug Mack of Mary’s Restaurant at the Inn at Baldwin Creek in Bristol. Mack believes maple syrup is the ultimate local food and that’s great for slower cooking and full-flavored foods, like sauces and savory dishes. He also points out that it’s great for people with dietary restrictions. 

He cooks one of his specialties for us – Maple Curry Chicken with Winter Vegetables.
